Pistachio Raspberry Energy Bars (Gluten & Dairy Free, Vegan, Paleo)

Ingredients

For raspberry layer:

  • 2 cups (225 g) ground almonds
  • 1/four cup (50 g) melted coconut oil
  • 1/four cup + 1 tbsp (one hundred g) maple syrup or honey
  • 1/3 cup raspberry reduction (Note 1)

For pistachio layer:

  • 1 1/2 cups (one hundred seventy g) ground pistachios
  • 1/four cup (65 g) pistachio butter
  • 1/4 cup + 1 tbsp (100 g) maple syrup or honey

You will also want:

  • 4 half x 7 inch freezer-pleasant field at leat 1 1/2 inch deep (in case you use other box dimensions, you might need to boom/lower the recipe, or truly make flatter/thicker bars)

Instructions

For pistachio layer:

  1. Line the container of desire with baking/greaseproof paper.
  2. In a bowl, blend all the pistachio layer components together till you get a homogeneous aggregate. The very last consistency will be cookie dough-like.
  3. Press the mixture into the covered field till you get a company, even layer.
  4. Set apart.

For raspberry layer:

  1. In a bowl, mix all the raspberry layer elements collectively till you get a homogeneous mixture. The very last consistency can be runnier than that of the pistachio layer.
  2. Transfer the raspberry combination on top of the pistachio layer, and clean out the surface with a spoon or spatula.
  3. Freeze overnight.

Serving:

Storage:
