Healthy Breakfast Roll-Ups Recipe

Ingredients

  • 1 egg
  • 1 teaspoon water or milk
  • Salt and pepper
  • 1 tender taco size flour tortilla (about 7 1/2 – 8″ diameter)
  • leaves Optional fillings: baby spinach (avocado, tomatoes, bacon, crumbled sausage, cheese, and so forth.)
Instructions

  1. In a small bowl, beat together egg and water/milk till blended. Lay tortilla out on a plate, top with cheese, if you wish to use.
  2. Spray a pan with cooking spray that has almost the identical diameter as the tortilla. Heat pan over medium-low warmth and pour egg combination into pan. Gently tilt or swirl pan to ensure that liquid egg covers the complete backside of the pan. Continue to prepare dinner until egg is cooked and no longer liquid. Season with salt and pepper.
  3. Using a heat-resistant rubber spatula, assist slide cooked egg directly on top of tortilla/cheese.Top egg with optionally available fillings. Roll up tortilla extremely firmly, however with out tearing tortilla or transferring elements. Cut roll-up in half of and serve
