Best Pecan Pie Baked Oatmeal
INGREDIENTS
- 2 1/4 cups rolled oats (gluten-free if needed)
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup chopped pecans
- 2 cups almond milk
- 1 egg or flax egg* (see note)
- 1/3 cup maple syrup
- 3 tbsp melted coconut oil (or butter or applesauce)
- 1 tsp vanilla extract
- Pecan topping:
- 1/2 cup pecans, chopped
- 1 1/2 tbsp maple syrup
- pinch of cinnamon & salt
INSTRUCTIONS
- Preheat the oven to 350 degrees
- Mix all the dry ingredients together in a bowl. Set aside.
- Mix all the wet ingredients together in a bowl.
- Pour the dry ingredients into the wet ingredients and mix until combined. Let sit on the counter for 10 minutes while you prepare the pecan topping
