Sweet Potato Tacos ( Vegan, Gluten Free )

Ingredients


  • 2 teaspoons  Paprika
  • 2 teaspoons  cumin
  • 2 teaspoons  chili powder
  • 2 pounds  candy potatoes cubed into half in chunks
  • 1 (eight oz) package deal  sliced mushrooms
  • 2 tablespoons  olive oil
  • 2 teaspoons  onion powder
  • 2 teaspoons  garlic powder
  • 2 teaspoons  salt extra to much less to taste
  • 1 teaspoon  pepper
  • 1 (16 oz) can  black beans
  •  Grilled Corn and Avocado Salsa for serving (see post above for different serving suggestions)

Instructions


  1. Preheat oven to 425 degrees F and line a baking sheet with a silicone mat.
  2. 
Place the entirety (MINUS BEANS) onto baking sheet.
  3. Toss to mix.
  4. Bake in preheated oven for 20-30 minutes, or till potatoes are smooth, stirring every 10 mins or so.
  5. Remove from oven and stir in black beans.
  6. Taste and re-season, if vital.
  7. Serve with tortillas, salsa, cheese, etc!
