Mexican Street Corn Tostadas Gluten Free

Ingredients


  • 1 15-ouncescan complete kernel corn, drained
  • 1/4 cup mayonnaise
  • Juice of 1/2 a lime
  • 1/four tsp salt
  • 1/four cup finely chopped purple onion
  • 1/three cup finely chopped cilantro
  • 1 15-oz.Can La Preferida Organic Refried Beans
  • 2 tbsp cotija cheese, plus more for topping
  • eight corn tostadas
  • chili powder to season for topping, optionally available

Instructions


  1. In a big bowl, upload corn, mayonnaise, red onion, cilantro, lime juice, salt and 2 tablespoons of cotija cheese.
  2. Mix together with a spoon till the corn is frivolously coated with all the substances. Set aside.
  3. Heat up the refried beans in a tumbler dish inside the microwave for approximately 2 to 3 mins, or till fully heated via.
  4. To assemble, unfold about three to 4 tablespoons of refried beans onto each tostada and pinnacle with a scoop or  of the road corn aggregate.
  5. Sprinkle with some cotija cheese and a dash of chili powder.
  6. Eat up!
