Best Pecan Pie Baked Oatmeal

INGREDIENTS


  • 2 1/4 cups rolled oats  (gluten-free if needed)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup chopped pecans
  • 2 cups almond milk
  • 1 egg or flax egg* (see note)
  • 1/3 cup maple syrup
  • 3 tbsp melted coconut oil (or butter or applesauce)
  • 1 tsp vanilla extract
  • Pecan topping: 
  • 1/2 cup pecans, chopped
  • 1 1/2 tbsp maple syrup
  • pinch of cinnamon & salt

INSTRUCTIONS


  1. Preheat the oven to 350 degrees
  2. Mix all the dry ingredients together in a bowl. Set aside.
  3. Mix all the wet ingredients together in a bowl.
  4. Pour the dry ingredients into the wet ingredients and mix until combined. Let sit on the counter for 10 minutes while you prepare the pecan topping
